February 2009The birthday cake has two layers of rum-soaked chocolate genoise. In between the genoise is a layer of whipped mascarpone (Italian cream cheese) and strawberries. On top is a milk chocolate glaze with bittersweet chocolate shavings. The collar around the cake is also milk chocolate. There are 35 white quince flowers for 35 years!
